Meat Free Monday continues with Charlotte’s post workout Chocolate Protein Banana Bread. 🍫

Ingredients

4 Ripe Bananas

1/4 Cup Coconut Oil

1/4 Cup Non Dairy Milk (I used low fat oat milk)

2 tbs Peanut Butter

1/2 Cup Brown Sugar (Soft)

1 tsp Vanilla Extract

1/2 Cup Vegan Protein Powder (I used chocolate flavoured by Vega)

1 + 1/2 Cups Wholemeal Flour

1/2 tbs Baking Powder

1/2 tsp Salt

10 – 15 Small Squares For Decoration Vegan Chocolate

DIRECTIONS

Step 1

Pre heat the oven to gas mark 4 and grease a loaf tin using vegan butter or additional coconut oil to prevent sticking.

Step 2

In a large mixing bowl mash the bananas, add in the coconut oil, non dairy milk, peanut butter, sugar and vanilla. Stir well with a wooden spoon until all ingredients are combined.

Step 3

Now add in the protein powder, flour, baking powder and salt. Give this another good stir with your wooden spoon until all the dry ingredients are incorporated with the wet.

Step 4

Take you mix and add this to you loaf tin. Place the vegan chocolate squares on top. Place into the oven, bake uncovered for 45 minutes then for a further 15-20 minutes covered. Use a knife to test if the loaf is cooked, if the knife comes out clean your ready to take the loaf out of the oven! If the knife is not clean, bake for another 10 minutes.

Step 5

Remove from the oven and leave to cool. Enjoy with your favourite coffee or as a post workout snack!
