MEAL PREP SERIES NO. I’ve lost count ?? ⏰?? ?
ROASTED VEGETABLE AND CRISPY CHICKPEA COUS COUS ??
I’ve got about a week until term starts so for most of my dinners this week I’m gonna try and make 2-3 portions to put the spares in my freezer ??
The containers I have aren’t big enough to fit my entire meal with all the carbs I need so these meal preps are gonna be my veg and protein but will add some more cous cous or something when serving ??
– you can use other beans but if they probably will only need 10 mins to cook, chickpeas take longer to get crispy
RECIPE: (spices for approx 2 portions)
> in a massive mixing bowl add in:
– all the veg you want
– 2 tbsp garlic
– 1 tsp salt
– 1 tbsp mixed herbs
– 2 tbsp maple syrup
– 2 tbsp lemon juice
– 1 tsp paprika
– 2 tbsp nutritional yeast
> mix altogether and airfry/oven roast for approx 25-30 mins
> when ready add to your cous cous cous
> when serving, mix in some fresh tomatoes and chopped coriander ?
Although this isn’t necessarily that quick of a meal, most of the time is just waiting for the roasting so you can do other things while you wait ??⏰
