☆ Massaged Winter Kale Salad ☆

Ingredients
▪︎2 big handfuls of kale
▪︎1/2 cup roasted butternut squash
▪︎1/2 apple
▪︎1 tbsp hemp seeds
▪︎1 tbsp pumpkin seeds
▪︎2 tbsp nutritional yeast
▪︎1 tbsp olive oil
▪︎1 tbsp red wine vinager
▪︎1 tsp yellow mustard
▪︎1/2 tbsp maple syrup
▪︎1/2 garlic clove
▪︎Salt and pepper to taste

Directions
▪︎Preheat oven to 400°F
▪︎Cut up butternut squash into 1/2 in cubes, add to a baking tray and roast for 15 mins or until tender
▪︎While squash bakes, add kale, olive oil, red wine vinager, mustard, maple syrup, garlic, salt and pepper to a bowl and massage with hands for 1-2 minutes
▪︎Top your kale with squash, apple, hemp seeds, pumpkin seeds, and nutritional yeast
