MASALA PURI WITH VAGHARELO BHAAT // A wholesome meal for Paryushan – an annual sacred festival for Jains that celebrates spiritual awareness. Masala puri and vagharelo bhaat are both Gujarati dishes. They’re so simple, yet greatly flavored. The masala puris are made from wholewheat flour and basic spices like chili powder, turmeric and asafoetida. They’re crispy and can be eaten as is or accompanied with a nice dipping sauce / chutney or curry dish. I love making these soft crispy puffed puris with vagharelo bhaat (tempered / seasoned rice). For the tempered fried rice, we use the same spices as we use for the puris + mustard seeds. The recipe basically is making the vaghar (tempering), then adding cooked rice to it and mixing it all together. Both the recipes use basic pantry-friendly ingredients. Enjoy this with a nice cup of chai and it’s the ultimate comfort food to have! 🙏🏼🔅
