many days off with an injured leg means I’ve finally been able to get creative in the kitchen! I made this tasty lemon coconut protein slice a couple of days ago – it’s packed full of protein and healthy fats, and tastes so indulgent! I used the @macr0mike Hawaiian salted vanilla protein in this recipe. The vanilla adds depth of flavour and the salt helps balance out the sweetness!

Dry ingredients:
- 3/4 cup almond meal
- 1/2 cup oat flour
- 1/2 cup desiccated coconut
- 40g @macr0mike Hawaiian salted vanilla protein
- Pinch of salt
- Zest of one lemon, finely grated

Wet ingredients:
- Juice of half a lemon
- 1/4 cup coconut oil, melted
- 1/4 cup rice malt syrup

Coconut cream frosting:
- 1 tin of coconut cream, refrigerated
- 1/2 tsp vanilla extract
- 1 tsp maple syrup
- Lemon zest for decorating

To make, combine dry ingredients in a bowl and mix well. Add in wet ingredients and stir until well incorporated. Spoon into a lined baking tray and spread evenly. Freeze or refrigerate for a couple of hours. To make the frosting, just scoop out the solid coconut cream from the top of the tin, add in the vanilla and maple syrup, and whisk until thick and fluffy! Spread on top of slice, and top with finely grated lemon zest. Slice and store in the fridge ?
