When I was in school my Dad always insisted that I learn basics first and then everything else becomes easy. But, that advice holds good for everything in life. Even in cooking. If you know the basics of a recipe you can twist and turn it to use many other ingredients. I use this tomato masala with so many main ingredients. Today used mandakki (mamra) 😀 Great for breakfast or brunch or lunchbox..

Here is the recipe for tomato masala that I make. Heat oil in a frying pan, add chopped onions and ginger garlic paste. Fry till onion changes color and becomes translucent. Add generous amount of finely chopped/pureed tomato. It is tomato masala right? I used one big tomato for one cup cooked rice. Depends on the taste (sour/sweet) of tomato you are using. Fry well adding turmeric powder. Add red chilli, coriander, cumin powders, salt and mix well. Add water if required. Once all the masala is done well add cooked rice or any other cooked grain (should be starchy) of your choice. Here, I used soaked mandakki. You can use soaked poha too. Mix well adding chopped coriander leaves. You can add little bit of garam masala also for some strong flavor.. Keep covered for few minutes for the grain to absorb masala. Then enjoy with raita and sandige (papad) of your choice. Easy huh?! 😀..
