There’s no exact recipe, since my mom freestyled this delicious, (selectively) low-carb meal, but I can give you the basics!

Servings: 4
Cook Time: 10 minutes
.
INGREDIENTS:
• 2 medium zucchini, spiralized into ribbons
• 1/4 cup alfredo sauce
• 2 tbsp Pesto sauce
• 1/4 cup Parmesan cheese
• Red Pepper Flakes, to taste
• Sprinkle of Trader Joe’s 21 Seasoning
• Optional: Grape Tomatoes

DIRECTIONS:
1. Spiralize the zucchini into ribbons
2. In a large pan over medium heat, warm the alfredo sauce, pesto, parmesan, 21 Seasoning, and red pepper flakes. Add the zucchini ribbons.
3. Mix & cook for about 5-10 minutes. Until some of the water has left the zucchini (& tomatoes), but it’s still al dente.
4. Plate & sprinkle some extra parmesan on top. Serve with Texas Toast
