Make these grain free donuts this weekend or any day to startboff with a little extra treat 🙂
Gluten and refined sugar free, they are so delicious and nutritious.
Here is how you make them:
Yield: 8-9 donuts Prep Time: 15 minutes Bake Time: 15 minutes
1 1/4 cup almond flour
1/3 cup coconut flour
2 tsp baking powder
3 tbsp tapioca flour
1/3 cup + 1 tbsp maple syrup
2 large eggs
1/3 cup kefir or regular yogurt or dairy free yogurt
1/4 cup coconut oil
2 Tablespoons (30g) unsalted butter
1/3 cup (80ml) pure maple syrup
2 tbsp icing sugar ( optional)
1) Preheat the oven to 170 c / 375 degrees farenheit and generously oil a silicone or non-stick donut pan. 2) In a large bowl, mix almond flour with coconut flour and tapioca , along with baking powder. 3) In another bowl, whisk eggs, maple syrup and kefir oryogurt. Combine with dry ingredients, add the melted coconut oil, until batter is just combined.
4) Spoon donut batter into each donut cavity, filling 3/4 of the way full. Bake for 15 minutes or until light golden brown. Let cool.
5) While donuts cool, stir all ingredients for the glaze in a small bowl and set aside. 6 When donuts have cooled, remove them from the pan by gently carving them out with a spatula. Then, dip each in the glaze. Enjoy!
