Made this for lunch and dinner in the last week all I can say is I’m OBSESSED.
I didn’t measure anything just eyeballed it all but approximate measurements of all the ingredients are below just adjust each ingredient to your taste 🙂

For the noodles:
– buckwheat soba noodles, cooked and rinsed with cold water
– 1-2 tbs soy sauce
– 1-2 tbs rice vinegar
– 1 tbs maple syrup
– splash of sesame oil

Tofu:
– firm tofu, cut into cubes
– 1-2 tbs soy sauce
– 2 tbs maple syrup
– 1-2 tsp chili garlic hot sauce or whatever hot sauce you want
– 1 tsp sesame oil

I just cook the tofu in a pan until it gets kind of caramelized and brown on the outside but I think it would also be good cooked in the oven

Carrot:
– shredded carrot
– 1-2 tbs rice vinegar
– 1/2 – 1 tbs soy sauce
– 1/2 – 1 tbs maple syrup
– sesame seeds

And Avo and more sesame seeds on top
