Made one of my favorite comfort dishes last night: Vegan Chickpea Curry! It’s shockingly plant based and packed with nutrients, protein, and immune boosting ingredients! This curry is so easy and fast to whip up, and it’s always a crowd pleaser!

🤎Ingredients:
1 tbsp olive oil
1 tbsp crushed garlic
1 large sweet onion (sliced)
2 cans chickpeas
1 can full fat coconut milk
3/4 cup vegetable stock
2 tbsp tomato paste
2 tbsp curry paste
3/4 tsp salt
1/2 tsp black pepper
2 cups spinach
🤎Directions:
1) Brown onions with 1 tbsp olive oil. Add garlic, tomato paste, curry paste, salt, and pepper and stir until fragrant. 2) Drain and add chickpeas. Brown for 2 minutes. 3) Stir in coconut milk and stock and bring to boil. Reduce heat to medium-low for 5 minutes. 4) Add spinach and stir until wilted. Serve over rice and enjoy!
*Optional: I added crushed hazelnuts, avocado, radishes, green onions, and a drizzle of olive oil to mine😉
