Made my mum and I this lentil ragu 🍝 I usually cook with soya mince so this one based with brown lentils and mushrooms 🍄 (my fave) and it was delicious and a refreshing change! I’ll give a rough recipe but tbh my method of cooking is usually winging it and hoping for the best ✌🏼
– heated up a glug of olive oil and added 4 chopped cloves of garlic and about 1/4 cup of chopped celery ( you can use onion here but I hate onions lol don’t come for me pls)
– I added about a tbsp tomato paste
– added a tub of finely diced mushrooms (idk 250-300g?)
– once the mushrooms have cooked down a bit, added a glug of balsamic vinegar, lil bit of soy sauce & liquid smoke, also added some frozen basil from my garden 🪴
– rinsed and added 1 tin of brown lentils then roughly tbsp dried Italian herbs and crumbled in 1 veg stock cube
– now for the boozy bit 🍷 half a teeny bottle of vegan red wine and 1 tin of chopped tomatoes 🍅
– then let simmer down and get thicc, 5-10 mins
– once the wholewheat spaghetti and broccoli was ready I plated up and topped with some nutritional yeast (a vegans best friend) and chopped pecans 😋🍝❤️
