Made dinner for the fam last night! A lil salad topped with hummus and baba ganoush with a side of quinoa and whole wheat pita! This was so good!

Ingredients:

Salad
-tomato, diced
-cucumber,diced
-kale/spinach/lettuce, chopped
Toss together

Quinoa
Bro tip: rinse your quinoa before you cook it. It gets rid of the weird taste. You’ll thank me later
-quinoa, cooked
-lime juice
-green onions,minced
-cilantro, minced
Mix

Baba ganoush
-eggplant, roasted
-cumin,salt, pepper,smoked paprika,tahini
Scoop out inside of roasted eggplant. Blend in food processor with other ingredients.
