Lunch with my boo. Potato leek soup and Rosalba salad-a salad that I named after Omar’s mom because it’s similar to the one she frequently makes.

Potato soup: sauté one chopped leek in olive oil until just soft. Add 3 cloves chopped garlic. Sauté until fragrant. Add 1 stalk chopped celery, 1 chopped carrot, 3 chopped russet potatoes. Sauté until slightly soft. Add splash of white wine to deglaze pan and let wine cook off. Add 1 tsp thyme, 1 tsp oregano, 1 bay leaf, 1/4 c nutritional yeast, salt and pepper to taste. Stir. Add veggie broth until ingredients covered by about an inch of liquid. Boil 20 min or until potatoes are soft. Add about 1/2 tbsp of rice wine vinegar. Ladled 2/3 of cooked soup into blender. Add 1/4 cup hemp seeds. Blend until creamy. Add blended soup back to pot and mix well. Simmer for a couple of minutes. Serve!
Rosalba Salad: lettuce/spinach mix. Handful chopped cilantro. 1 large green onion chopped. Half medium cucumber, 1/2 cup cherry tomatoes chopped. 1 carrot boiled then chopped. 1 beet boiled then chopped. Mix with favorite dressing.
