Lunch today was warm but fresh! Fresh blush tomatoes, crushed garlic, red onions, fresh basil, balsamic vinegar and a drizzle of extra virgin olive oil, served on toasted sourdough 😋

Ingredients:

200g blush/cherry tomatoes (halved)
2 – 3 cloves of garlic
1/2 red onion (diced)
Handful fresh basil (torn/chopped)
1 – 2 tbsp balsamic vinegar
Drizzle of extra virgin olive oil

Place the tomatoes, garlic and onion into a small lidded saucepan (no oil needed) and allow to warm through, stirring occasionally (for 5 minutes or until tomatoes begin to soften slightly). Take off the heat, add the basil and balsamic vinegar and stir everything together. Serve on toasted bread and drizzle with extra virgin olive oil. Enjoy!
