Lunch is served. Mexican inspired today ! I did a vegan quinoa tofu « poêlée », with a pineapple avocado salsa. So quick, easy, balanced, and yummyyyy ???

For the fried rice style quinoa :
– cook the quinoa
– while it cooks, grill the bell peppers in a pan with onions, and then add the tofu. Grill these ingredients together, and in the end add the red beans (canned). Add the spices (Mexican style)
– once everything is grilled, mix it in the pan with the quinoa, let it a few minutes so that all the flavors combine.
– add on top of it a salsa made out of avocado, pineapple, lime juice, s&p.

This is perfect as is contains proteins (tofu, beans and quinoa), fats (avocado), complex carbs (quinoa, beans) and fibers (quinoa and beans). Great meal ! I recommend ?, and it’s vegan, gluten free and dairy free.
