👉 Here, I got for you a awesome VEGAN CHICKPEA CURRY recipe! Very nutritious, and also very high in antioxidants due to the high spices and herbs content! So a great LUNCH or DINNER MEAL IDEA! SAVE this POST & TAG someone with who you want to try this recipe! 😋🌱⁠

INGREDIENTS:⁠
1 can of cooked chickpeas (~400g)⁠
200ml coconut milk⁠
200ml tomato puree⁠
1 large carrot, diced⁠
2 tablespoons olive oil (you need enough oil to sauté onions, garlic, etc.)⁠
A bit of Ginger, minced (optional)⁠
2 teaspoons CURRY powder⁠
1 teaspoon Garam masala (spice)⁠
1 Garlic glove, minced & 1 medium onion, diced⁠
1 teaspoon agave syrup⁠
1 red bell pepper, sliced⁠
Juice of half a lime & parsley to garnish⁠
Salt to your taste⁠

HOW TO:⁠
First, sautée the onions, garlic, carrots and add a bit of minced ginger (optional) in a large pan. After sautéed, add the spices, namely curry and garam masala, stir well and let it combine with the sautéed veggies. Next, add the tomato puree and coconut milk. Let it cook for around 10minutes over medium heat. Now, add 1 teaspoon of agave syrup and salt to your taste. Stir well again, and add the cooked chickpeas as well as the bell pepper. Let it cook again for a bit while stirring everything together. To finish it off, add half a lime and some chopped parsley. Serve with some rice and ENJOY! 😎✌🏾 *images from unsplash⁠
