Looking for new sandwich inspo? Try this Chickpea Salad Sammie!
INGREDIENTS
CHICKPEA SALAD
? 1 can of chickpeas or 1 1/2 cup of cooked chickpeas
? 1 medium carrot
? 1 stick of celery
? Mayo or vegan mayo for a vegan alternative
? 1 tbsp Dijon mustard
? Garlic powder
? Salt and Pep
? Lemon juice
RECIPE ?
? Finely chop your carrot and celery
? Lightly mash the chickpeas with a fork
? Combine the veggies and chickpeas
? Add Mayo/vegan mayo 1 spoon at a time and mix with the chickpeas until it reaches a creamy consistency of your liking
? Add in mustard, garlic powder, salt/pep, and a squeeze of lemon juice to your taste
? Mix it all together and you’re done!
Put your chickpea salad on some toasted bread and top off with your choice of toppings! I chose some thinnly sliced tomatoes, pickled red onions, spring mix, pickles, and melted mozzarella (melted while the bread was toasting in the pan)
