Looking for a quick and healthy lunch idea?? Check out the link in my bio to see how I made this zucchini noodle pasta with avocado pesto.
Ingredients
1 full zucchini (2 servings)
1/2 avocado
10 basil leaves
Handful of walnuts
5 Cherry tomatoes
1/2 lemon squeezed
1 – 2 tbsp olive oil
2 tbsp almond milk (or coconut)
Salt ( at least 1 tbsp)
Pepper ( at least 1 tbsp)

Instructions
1. using a vegetable spiralizer make the noodles with the zucchini
2. Place in a bowl, add salt and let them sit for 15 minutes to get rid of some water
3. In the meantime mix avocado, walnuts , basil, lemon juice, oil, black pepper and almond milk in food processor and mix until creamy and smooth
4. Heat oil in a pan
5. Add noodles and sauté for 5-7 minutes until almost soft
6. Add cherry tomatoes and saute for a few minutes
7. Add pesto and stir to combine and coat the noodles
8. Cook for 2 more minutes until pesto is heated
