Ingredients:
1/2 cup (100g) Chana Dhal, soaked overnight and rinsed
1 carrot, cut into 1cm cube
1 onion, cut into 1cm cube
1 potato, cut into 1cm cube
2 cloves garlic, grated
1/2 head cauliflower 400g, broken into small florets
200g canned tomatoes or ripe tomatoes
1/2 cup water
20g dried currants
1 vegetable stock cube
2 Tbsp. oil
2-3 tsp curry powder
1 tsp smoked paprika
1 tsp coriander powder
1 tsp cumin powder
1 bay leaf
1 tsp pink salt
Sliced almond
1/2 cup frozen green peas
Salt and pepper
Chill pepper if you need
Methods:
1. In a large pot, heat 2 Tbsp. oil over medium heat, add garlic and cook until fragrant. Add onions and continue to cook until soft. Stir occasionally.
2. Add carrot and potato. Continue to cook for a few more minutes.
3. Stir Chana Dhal, cauliflower, and spices and continue to cook for a few more minutes.
4. Add water, tomatoes, vegetable stock cube, bay leaf, chilli pepper, and salt and bring to boil. Heat with medium to low flame for 25 minutes with a lid. Stir it sometimes as to not burnt it.
5. Add dried currants and frozen peas and heat 3 more minutes.
6. Salt and pepper to taste. Garnish with sliced almonds before eating.
