London fog muffins ??
Turned this yummy drink into a snack and ohhhh my these are good. Such a good snack to have on a cooler fall day with a cup of coffee (or maybe another London Fog if that’s what you’re into) ??♀️. These were so easy to throw together and just made a batch of 6, so double if you choose! Hope you like your treats @kylieparent ?!!
What you need:
* 2 earl grey tea bags
* 1 tsp vanilla extract
* 1/4 tsp crushed lavender (optional)
* 1/2 cup warm non-dairy milk (I used almond from @califiafarms )
* 1 cup spelt flour (can use regular, oat, etc)
* Pinch of salt
* 1 1/2 tsp baking powder
* 1/2 cup maple syrup
* 1/2 cup vegan butter (@earthbalance )
* Optional topping: icing sugar
??preheat oven to 350
??heat your milk of choice in a microwave-proof container, add the fillings of 1 tea bag, lavender (optional) and vanilla, stir and let rest aside
??mix together your dry ingredients in a separate bowl (flour, baking powder, salt)
??whisk together your butter, maple syrup and add in your tea & milk mixture you had set aside
??combine wet and dry ingredients, then add to a lined muffin tray and bake for 20-25 mins (depending on your oven). Before placing in the oven you can use your second tea bad to sprinkle over top of the muffins for more flavour.
