LOADED VEGGIE PASTA, mmmmhhmm this meal is currently being used as a perfect meal prepped lunch! The recipe is so simple and tasty you can’t go wrong. I mean who doesn’t love a big bowl of pasta.

Ingredients:
* 1 large eggplant -diced
* 1 large zucchini – diced
* 1.5 onions – finely diced
* 4 cloves of garlic – minced
* Handful of fresh roughly chopped basil
* 2 tsp oregano
* 1 tsp red chilli flakes
* s&p
* 2 cans of petite diced Italian tomatoes, I can blended into a liquid and the other left chunky
* 1/2 cup wine (not required, I just had some old leftover)

Method:
1. Preheat your oven to 400F and bake your cubed zucchini and eggplant which is coated in light olive oil. Bake for around 30 mins
2. In the mean time, in a large saucepan on medium heat add some olive oil and caramelized your onion unit golden brown
3. While you are cooking your onions cook your pasta according to the box instructions
4. Then add your garlic, and cook for around a minute
5. Add your dried oregano, chili flakes, wine, basil, tomatoes
6. The veg should be ready by now and you can add them to the sauce.
7. Adjust with salt, pepper and other desired herbs. If you would like the sauce more liquidy you can add some water
8. Allow to stew for at least 15 minutes then dig in and ENJOY 🙂
