Lightly spiced, creamy and a delicious Punjabi curry made with pinto beans/ kidney beans, onions, tomatoes and spices. This is my mom’s way of making delicious and flavorful curry🍛, absolutely irresistible.
In Indian cuisine, alot of legumes are eaten regularly as they are the main source of protein and fibre.

Ingredients-
-Pinto beans / chitri rajma – 150g
-(Ground)Onion -1medium size
-Minced Garlic -4 cloves
-Grated Ginger – 1/2 inch
-(Ground)Tomato – 3 medium size
-Green Chilli – 1
-Oil – 2 tbsp
-Rock Salt – 1 tsp
-Red Chilli Powder – 1/4tsp
-Turmeric Powder -1/2 tsp
-Ground spices – pinch
-Dry Coriander Powder – 1/2tsp

Instruction-
– Wash and soak the rajma/Pinto beans overnight.
– Boil the Soaked rajma in salt and turmeric powder on high flame in pressure cooker.
– After 1 whistle simmer the flame . After 30 minutes turn off the flame.
– Heat oil in a pan , and add ginger garlic .
– Add onion paste when ginger garlic turns light brown.
– Mix it well until it turns golden brown.
– Add tomato and green chilli and red chilli powder.
– Cook it well on medium flame until the oil gets separated in the pan.
-Add the boiled rajma/Pinto beansto it.
-Boil it for 6 minutes without any lid.
-Top it with Dry Coriander Powder and Ground spices.
-Rajma/Pinto beans is ready to serve .
Enjoy it with Rice .It’s irresistible!!
