Light dinner – Quesadillas

1 Wholemeal Tortilla
1/2 Tomato (chopped)
A handful of Chickpeas
A few sprigs of Cilantro (chopped)
Cheddar &/or Mozarella Cheese
Black Pepper
Sea Salt (optional)

1. Arrange tomato on half the tortilla. Arrange chickpeas between pieces of tomato, making everything a single layer.
2. Sprinkle cilantro on top of tomato. Sprinkle black pepper and sea salt on top of tomato.
3. Arrange mozarella and cheddar on top of tomato.
4. Fold the empty half of the tortilla over the half with the tomato.
5. Heat up a non-stick pan. Don’t put oil. Put the tortilla on top to toast. After 2 mins, flip over and toast the other side.
6. When tortilla is slightly brown and mozarella and cheddar have melted, remove from the pan and slice. Serve warm.
