Let’s talk salad! It’s truly my language. In the summer time with the warm wind, fresh air and all the fresh veggies and herbs you can get your hands on. This is a refreshing crowd pleaser enjoy! Recipe??. Strawberry and Shaved zucchini salad

Arugala
1 pint strawberries
1 zucchini
1 pint grape tomatoes
2 avocados sliced and cut in halves
1/2 red onion julienned
Feta (for vegan omit or add vegan cheese)
Fresh dill
Pistachio (shelled)

Dressing
2 Fresh Lemons
1/2 cup Extra Virgin Olive Oil
Dill
Garlic powder
Sea Salt
Pepper (I used pink pepper)
Fresh basil

Assemble your salad using your arugula as your base. Add all your ingredients to your taste. Next squeeze the juice of the lemons (reserving the Lemon rinds) and mix with your olive oil and whisk together your seasonings and herbs to taste. Make sure you taste your dressing. You may need to add some extra salt, pepper, and garlic powder directly to the salad.
