Let’s give ‘em pumpkin to talk about

This sure will do the trick

Not to mention there’s a pretzel crust under there 🤫

🔸 2 cups pretzels
🔸 1/4 cup vegan butter
🔸 2 TBS sugar
🔸 1 TBS peanut butter (optional but delish)

Preheat oven to 350

Put all crust ingredients in the food processor until crumbly

Spray round pan with nonstick spray

Bake for 8-12 minutes until golden

While the crust is baking prepare the rest of the cheesecake

🔸 1.5 cups cashews (soaked for 4+ hours)
🔸 1 cup pumpkin purée
🔸 1/2 cup nondairy milk
🔸 1/2 cup sugar
🔸 1 TBS cornstarch
🔸 1 tsp pumpkin pie spice
🔸 1 tsp vanilla extract

Combine all ingredients in food processor until smooth as possible

Pour into crust and bake for 20-25 minutes until golden orange

Let it cool completely

Place in the fridge for 4 hours

Optional: I swirled Trader Joe’s cocoa cookie butter into the middle of the cheesecake then poured the rest of the mixture on top before baking

No macros included here because it’s Thanksgiving tomorrow and you need to enjoy it!
