Lentil ‘mince’ Börek
Börek is one of my favourite and fast meal ideas. You can experiment so much with the filling and it always surprises with the flavour. Today we made börek with vegan mince made from lentils and it was soo delicious! Definitely give it a try!
Ingredients:
•4 sheets of phyllo or yufka sheets
•1/2 cup vegetable oil
•3 tablespoons flour
•3 tbsp plant milk
Filling:
•300g cooked lentils
•1 onion
•1bell pepper
•1/2 tsp tomato or pepper paste
•4 tablespoon olive oil
•2 teaspoons paprika
•handful minced parsley and dill
•Salt
Directions:
Finely chop the onion and bell pepper and sauté until translucent. Add in the tomato paste and stir for 2 mins. Stir in the paprika. Add in lentils, parsley and salt, then stir well, mash half of the mixture with a fork, mix everything and remove from heat. Place one phyllo sheet on the clean kitchen counter,
Whisk together 1/2 cup of oil and 3 tablespoons of flour until frothy.
Brush 1/4 of the oil mixture onto the phyllo sheet. Place a second sheet on top,
Brush this with same amount of oil mixture. Cut this into 8 squares. Place some of the lentil filling onto the philo sheets. Then close from the sides and fold. Prepare the other two phyllo sheets the same way. Brush the top with plant milk.
Bake at 200 degrees celsius preheated oven until golden brown.
