Lentil bolognese 🌱

Lentil Bolognese is hearty, flavorful, protein packed 💪🏻

Ingredients
1 carrot (finely chopped)
1 onion (finely chopped)
1/2 zucchini (finely chopped)
2 cloves of garlic (finely chopped)
200 g lentil ( uncooked)
300 g tomato sauce
1-2 tbsp olive oil
400 ml vegetable stock
100 g plum tomatoes (diced)
bunch of fresh basil ( chopped)
2 tbsp herbs de provence
2 tbsp nutritional yeast
Salt and pepper to taste

Method
Sauté the onion ,garlic and zucchini in olive oil.
Add the diced tomatoes and tomato sauce .
Pour in the vegetable stock ,lentils and carrots. Bring to a simmer and cook until lentils are tender.
Add salt , pepper , nutritional yeast, herbs and chopped basil .
Serve warm and enjoy!
