LENTIL BALLS IN TOMATO SAUCE

If you want cheap meals, just buy whole foods as much as possible instead of the expensive vegan substitutes👌🏻
This meal is based on potatoes and lentils, my favorite cheap superfoods! 😎

INGREDIENTS (For 4 servings)
For the meatballs (+/- 18 balls)
* 350gr cooked or canned green lentils (150gr dry lentils)
* 70-100gr breadcrumbs or oats (or whatever you like to use to absorb the moist of the lentils so that you can easily form balls)
* 1 diced medium onion
* 3 minced garlic cloves
* 2 tbsp tomato paste
* 1 tbsp soy sauce
* dried Italian herbs of choice according to taste (oregano, thyme, basil)
* Salt & pepper to taste
* Cumin to taste (optional)
* 1 tsp red wine vinegar (optional)
* A little bit of olive oil for frying the balls. (For healthier version use airfryer or oven to bake the balls)
For the sauce:
* 500gr tomato marinara sauce
For the mashed potatoes:
* 10 medium-sized white potatoes
* unsweetened soy milk (amount to taste)
* Nutmeg to taste
* Salt & pepper to taste
* some vegan butter (optional)
On the side:
* 400gr green beans

INSTRUCTIONS
For the “meatballs”:
Sauté the garlic and the onion in a pan until soft. When done, blend the garlic, onion, cooked lentils, and the rest of the “meatball” ingredients in a food processor. (You can choose to not blend and leave it chunky instead)
Form little balls from the mixture with your hands. (+/-18 balls).
Bake the balls in the oven, air fryer, or in a pan with a little bit of olive oil until golden brown.
When the balls are ready, pour the marinara sauce in a pan together with the balls and spice up with more salt & pepper if necessary. Let the balls simmer in the tomato sauce for about 20min on low heat.
For the mashed potatoes:
Dice the potatoes in small pieces and cook for at least 10min in salted boiling water. When done, drain the potatoes. Put the potatoes back in the pot. Add the plant-based milk, salt, pepper and nutmeg. Mash it well until the desired consistency.
Meanwhile, cook the green beans in boiling water for about 12-16min. Drain the beans and spice up with some salt & pepper.
When everything is done, dress your plate with all this deliciousness!
