Lemon & poppy seed loaf ๐Ÿ‹
I baked this loaf for my aunt because itโ€™s her favourite & she was craving it for so long. I used @bbcgoodfood vegan lemon cake recipe but added in poppy seeds and made a lemon drizzle ๐Ÿ™‚

Ingredients:
100ml vegetable oil
275g self-raising flour
200g caster sugar
1 tsp baking powder
1 lemon, zested, ยฝ juiced
Poppy seeds (approx 2-3tbsp)
Method:
1)Heat oven to 200C/180C fan/gas 6.
2) Oil a 1lb loaf tin and line it with baking parchment.
3)Mix the flour, sugar, baking powder and lemon zest in a bowl.
4)Add the oil, lemon juice and 170ml cold water, then mix until smooth.
5)Pour the mixture into the tin. 6)Bake for 30 mins or until a skewer comes out clean.
7)Cool in the tin & then remove
8) make icing if desired
