Lemon P O P P Y S E E D muffins πŸ‹

I’ve posted this recipe before, but they’re so yummy and cute so I wanted to share it again! For those of us that aren’t bakers (πŸ™‹πŸΌβ€β™€οΈ) you’ll still be sure to have these simple ingredients around the kitchen! πŸ₯„

πŸƒ Dry Ingredients
– 1 cup all-purpose flour (you can use any, but I used gluten free Ancient Grain flour)
– 1 tsp baking soda
– all the poppy seeds you want (I like a ton, so dump em in! πŸ€—)

πŸƒ Wet Ingredients
– 1/4 cup almond milk (or other plant milk)
– 1/2 cup unsweetened applesauce
– 1/4 c pure maple syrup
– 1/4 tsp vanilla extract
– 1 tsp apple cider vinegar
– zest from 1 lemon
– juice from 1/2 lemon

1. Preheat oven to 350Β°F and grease your muffin tins. I used mini tins.
2. Mix together all dry ingredients together in bowl with a fork.
3. Mix all wet ingredients together in separate bowl with a fork or whisk.
4. Pour wet ingredients into dry ingredients and fold together with spatula or spoon.
5. Lightly grease muffin pan and scoop batter into muffin tins and bake for about 15 minutes if using mini muffin sized tins, or around 20 minutes if using regular sized ones.
6. Cool muffins a little before removing from pan, enjoy! πŸ‘ŒπŸ»
