LEMON MERINGUE SMOOTHIE ??⠀⠀⁠⁠

Happy Sunday my loves!! I’ve been indulging in heavy foods all week and as a result decided my supper snack (I have to have something a few hours before bed or my sleep is impaired, everyone is different in this regard though) should be something light and alkalising. The many health benefits of lemon have been known for centuries. The two biggest are lemons’ strong antibacterial, and immune-boosting powers. Lemons are also a great low-FODMAP digestive aid and liver cleanser. This gorgeous-coloured fruit contains many substances–notably citric acid, calcium, magnesium, vitamin C, bioflavonoids, pectin, and limonene–that promote immunity and fight infection. However, by themselves, lemons are, well, not the most pleasant tasting fruit. ? ⠀⠀⁠⁠

It’s for this reason that I LOVE this Lemon Meringue smoothie recipe so much. The creaminess of the coconut and sweetness of the ripe banana helps balance out the lemon’s acidity, while still giving it that zesty twang we all known and love. ? Enjoy this one first thing in the morning to kick start your metabolism & get those digestive juices flowing!⠀⠀⁠⁠

Recipe below?⠀⠀⁠⁠
Makes: 2 servings⠀⠀⁠⁠
• 1/2 cup coconut water⠀⠀⁠⁠
• 1 1/2 cups plant-based milk (I like something creamy like Macadamia, soy or hemp)⠀⁠⁠
• 1/4 cup macadamias (soaked in filtered water)⠀⠀⁠⁠
• 1 banana⠀⠀⁠⁠
• 1 tsp vanilla (powder or extract)⠀⠀⁠⁠
• juice from 2 large lemons ⠀⠀⁠⁠
⠀⠀⁠⁠
Blend all the ingredients in a high-speed blender until a thick, creamy consistency is reached. Serve with some lemon zest over the top & a sprinkle of vanilla powder or cinnamon.⠀⠀⁠⁠
