Serves 6
Ingredients:
1 cup fresh parsley, chopped
1 bay leaf
2 cloves of garlic, minced
2 leeks, white and light green parts sliced 1/2 inch thick and washed thoroughly
4 green onions, finely chopped
1 cup diced carrots
2 celery ribs, diced
1 can no salt added chick peas
Salt and pepper, to taste
6 cups water
1 veggie bouillon cube
1 cup millet
1/2 cup pearl barley
1 1/2 pounds golden potatoes, washed and cubed
1 teaspoon lemon juice
To serve – fresh parsley, lemon juice and freshly ground pepper .

Instructions:
To a large pot, add leeks, carrots, garlic, celery, green onions and season with salt and pepper, Cook on medium heat, stirring occasionally, about 10 minutes.
Add the bay leaf, veggie cube, parsley, potatoes, chickpeas, and 6 cups of water and simmer covered for 10 minutes.
Now add the barley and cook covered for 25 minutes and then add the millet and cook for about 12 minutes. (Barley takes a little longer to cook, hence you add it first)
Check for seasoning and doneness. Mash a few chick peas and potato cubes. Adjust consistency by adding some hot water, if needed.
Season with freshly ground pepper, fresh lemon juice and some more fresh parsley.
