Leek and potato hash-toast 🥔🥬 by @yummyyatra ack with flavour from the leek and fresh rosemary

Serves 3-4
3 medium size potatoes , washed thoroughly and cut into small cubes (I used red potatoes)
1 large fresh baguette (or any soft French bread)
2 tsp oil or vegan butter
2 large leeks, greens trimmed and whites, diced 4 cloves of garlic, minced
Salt, to taste
Pepper, to taste
2 Tbsp chives, chopped
Some fresh rosemary, as needed
Dairy free shredded cheese, as needed
To serve
Favorite hot sauce
Sriracha mayo (some vegan mayo mixed with a few spoons of sriracha)
Heat oil or vegan butter in a non-stick skillet and sauté the sauté until they turn golden brown, about 30 seconds
Add the leek and sauté for 2-3 minutes, stirring often
Stir in the potatoes, season with salt and pepper, and cook them covered , stirring occasionally, until they are cooked through, about 15 minutes (depends on the variety of potato)
Turn off heat, add the chives and set aside
Meanwhile, preheat oven to 400°F. Line a baking and set aside
Slice a large baguette lengthwise and if you like crosswise too and top each piece with the leek-potato hash
Top them with good melting variety of dairy free cheese of your choice
Sprinkle fresh rosemary
Arrange the topped bread pieces on to the baking sheet and bake for about 10 minutes, or until the cheese appear to melt
Remove from oven and top with hot sauce or sriracha mayo just before serving
