Last week I ate very nice dumplings in a restaurant and once again I was delighted by these small steamed things. At first I thought it isn’t even possible to create dumplings at home without special equipment. But then I was inspired by @gluecksgenuss and tried it right away. This is the result, it worked very well.
I made the dough by myself, but you can also buy it at an asian supermarket. ?

Here is the recipe for one portion:

Dough:
~ 100 g flour
~ 50 ml hot water
~ 1/2 tbls salt
Mix the ingredients in a bowl, stir briefly and then knead the dough for about 10 min until it is smooth. Let it rest for about 30 min and then you need small thin circles of dough. On the food blog of @kuechenchaotin is a detailed description how to get these circles. ?

Filling:
I used carrot, eggplant and mushrooms for my filling, but feel free to fill your dumplings with whatever you like.
~ 1 carrot
~ a piece of eggplant
~ 3-4 mushrooms
~ 1 onion
~ 1 clove garlic
~ pepper, chili, turmeric
~ soy sauce
Cut everything into very small pieces. Heat a pan with a little oil and shortly steam onion and garlic. Add vegetables and spices and cook everything until it’s soft. Add a dash of soy sauce at the end. ?
Now you can build your dumplings. There are different ways to fold dumplings and with a little practice anyone can do it. It doesn’t have to look perfect! When you’re done folding dumplings heat a pan with some oil and fry them on both sides for a few minutes. Then add about 50 ml water and put the lid on. Now you can steam your dumplings for 5-10 min. ?
For the sauce I simply mixed soy sauce, agave syrup, parsley and sesame. ?
