Last nights power quinoa kale salad was🤤🌱

Ingredients (all from trader joes♥️)
1 cup of cooked then cooled gf tricolor quinoa (I used about a 1/4 cup per individual salad bowl)
2 large handfuls of chopped kale, massaged
1/2 can of drained chickpeas
English cucumber
Heirloom tomatoes
Red and yellow bell pepper chopped
Pan cooked high protein extra firm tofu marinated with cayenne, paprika, pepper, cumin, garlic seasoning
Dressing: 1/2 lemon juiced, 1 tbsp apple cider vinegar, and 1 tbsp tahini sauce
Topped off with some avocado of course🤪 🥑
