Lasagna soup – 1st August 2020

Recipe makes 6 portions

Ingredients:
2 heads of broccoli, chopped
6 carrots, chopped
1 cup frozen sweetcorn
1tbsp cumin seeds
1tbsp turmeric
2tbsp ground coriander
1 pack chopped button mushrooms
1 pack Asda free from Lasagna sheets
2 tins butter beans
Salt and pepper
2 chopped red onions
2 cloves of garlic
1tbsp mustard seeds
1tbsp fenugreek seeds
Vegetable oil (enough to cover the bottom of the saucepan)
1 red pepper, chopped
1 jar of passata

Method:
1. Heat the fenugreek seeds and mustard seeds in the oil until they pop.
2. In a separate pan, saute the mushrooms until cook.
3. Add the onions and garlic to the seeds and oil fry.
4. Add the turmeric, ground coriander and cumin seeds.
5. Add the frozen corn, sliced carrots and let them cook.
6. Add the pepper and broccoli and let them cook.
7. Add the passata, butter beans, and seasoning.
8. Cook the lasagna as per instructions.
9. Cut the lasagna sheets into smaller rectangles and combine into the vegetable mix.
10. Serve with dairy or non-dairy cheese, and enjoy!
