This is probably the prettiest dish I have ever baked. I dint even want to touch it, it was soo pretty ?But I did and I’m so glad I did because it was absolutely delicious. Cream frosting between cookie layers and topped with fresh berries never tasted soo good. It’s soo simple to make and sooo good, you won’t believe me unless you try ?

Ingredients:
For the Tart (Pate Sablee)
1 cup softened butter
1/2 cup powdered sugar
2 to 2 1/2 cups all purpose flour
1 egg (substitute with flax egg)
1/2 cup ground almonds
1 tsp almond extract

For the frosting:
200g Mascarpone
1 cup whipping cream
1/2 cup powdered sugar
1 tsp vanilla extract

Prep:
In a mixing bowl cream butter and sugar until it’s fluffy. Add the egg and vanilla extract and mix well. Finally add the almond extract. Add in the flour and almonds and mix well only until combined. Do not overmix. The batter will be thick so add flour as required to get that consistency. Divide into two equal parts and wrap in a cling foil and refrigerate for 30 mins. Once done roll the dough between two parchment papers into a circle of 10 in. Use a 9in circular cutter to cut the outer layer and a 4in cutter to cut the inner layer. Refrigerate for 10 mins and preheat the oven to 180C. Once done bake for 12-14 mins or until the edges are brown. Remove and cool completely. For the frosting in a bowl add mascarpone and whip it until creamy. Add the powdered sugar, vanilla and mix until incorporated. In an other bowl whip the cream until it forms stiff peaks. Add the cream to the mascarpone mixture and fold it in. Transfer to a piping bag and with a round tip. Place one tart and pipe even dollops of frosting all over. Place the other tart on top and repeat the frosting. Refrigerate for 2 hours. Before serving top with berries and fresh flowers. This will be a beautiful centre piece for a perfect dinner party.
