Kung pao lotus root + tofu

Ingredients:
1 large lotus root (fresh, frozen or packed in water), peeled and cut into 1/4-inch thick rounds
1/4 red bell pepper (optional)
1/2 slab of cubed tofu
1 inch fresh ginger, peeled and finely diced
5 dried red chiles, cut in half
2 scallions
10 whole Szechuan peppercorns
2-3 garlic cloves, sliced
1/2 cup peanuts, toasted
Vegetable oil
2 tablespoons soy sauce
1 tablespoon rice vinegar
1/2 teaspoon sugar
1 teaspoon toasted sesame oil
Cornstarch slurry (2 tbs cornstarch mixed with 1/2 cup water)
