Kothimbir vadi is a popular Maharashtrian snack made from the fresh coriander leaves, besan (gram flour) and spices.
I tried to give a twist to make it more healthy and a good snack option for diabetic patients.
Below I have added benefits of main ingredients :
Chana atta is a soluble fibre that not only reduces blood cholesterol levels but also aids in the slow absorption of sugar into the bloodstream, causing the blood sugar levels to rise slowly. Besan is high on fiber and proteins which is extremely good for diabetics. It is gluten free too.
Peanuts : According to an article in the British Journal of Nutrition, eating peanuts or peanut butter in the morning may help control your blood sugar throughout the day. Peanuts may also help lessen the insulin spike of higher GI foods when paired together
Coriander has multiple health benefits. Coriander or cilantro is a wonderful source of dietary fiber, manganese, iron and magnesium as well. In addition, coriander leaves are rich in Vitamin C, Vitamin K and protein. They also contain small amounts of calcium, phosphorous, potassium, thiamine, niacin and carotene
Spinach is an excellent non-starchy and diabetic-friendly vegetable you can add to your diet. Spinach also contains a good quantum of fibre, which prevents spike in blood sugar levels. Spinach has very low glycaemic index too.
Sesame seeds also contain good amounts of poly and monounsaturated fats. The former has been linked with a slower progression of Type 2 diabetes in patients. This is why sesame seeds make for ideal diabetic-friendly snacks during winters.
