Kombu mushroom ramen 🍜 with vegetable gyoza, udon noodles, pak choi & shroooms πŸ₯Ÿ made this base up off the cuff and ngl I was vvvv proud of myself here 😏 recipe below ⬇️⬇️

🍜 kombu mushroom ramen recipe 🍜serves 4 inspired by @woon.heng
β€’ 700ml kombu Dashi β€’ 400ml unsweetened plant based milk β€’ 2 tbsp miso paste β€’ 1/2 thumb ginger, grated β€’ 4 garlic cloves, minced, 10 slices spring onions β€’ 2tbsp sesame seeds, ground β€’ udon noodles β€’ @itsuofficial gyoza β€’ 2heads pak choi β€’ 4 portobello mushrooms

FOR THE MUSHROOM PASTE: 30g dried shiitake mushrooms, soaked in boiling water and drained β€’ 1 garlic clove β€’ 1tbsp tahini β€’ 3 spring onions β€’ 10g miso paste β€’ 1tsp sesame seeds β€’

– blend the paste ingredients together and set aside
– meanwhile, heat up a tbsp oil (preferably sesame oil) in a v deep pan and fry the garlic, onions, ginger until fragrant
– now add in the paste along with the miso and fry for a further 2-5mins
– add in the kombu Dashi and the ground sesame seeds and simmer for 5 mins
– add in the milk and simmer for 10 mins more
– now add in the pak choi and mushrooms to the ramen soup and boil till soft and cooked through
– prep udon noodles and gyoza and pour the ramen over top & assemble the veg 🌱 sprinkle with sesame seeds and shrirachaaaaa (Ofc) πŸ„πŸ„
