Khichdi with Beetroot Gujarati sweet kadhi!!
I know I know I use lot of beetroot. I am in love with it. I have done a similar dish before. But, this time I decided to add beetroot to the kadhi and to make it Gujarati style. Beetroot here complements the sweetness of the Gujarati kadhi. Simple and easy dish made in my instant pot by @instantpotofficial which has become so essential in my kitchen. I no longer have to worry about switching off my pressure cooker on the hob plus, it keeps my food warm for as long as I want. Here is the recipe-Serves 3
Khichdi-
1 tbsp ghee
1 bay leaf
1/2 inch cinnamon stick
2/3 tsp cumin seeds
3/4 cup rice
3/4 cup green mung bean split
1.75 cups water
1 onion, chopped
1 tomato, chopped
1.5 tsp ginger garlic paste
Salt as per taste- I added 1 tsp
1/3 tsp turmeric powder
1. Switch on the saute mode at normal. Add ghee. Once hot, add bay leaf, cinnamon and cumin. Once they splutter, add onion and ginger garlic paste
2. Once onions are brown, add tomatoes and let cook till mushy
3. Add the rice, mung dal and water. Also add salt and turmeric. Close the lid. Change to beans mode and set the timer to 18 mins at normal
Kadhi-
1 cup yogurt
2 tbsp gram flour
1/2 inch ginger
1 green chilli
Salt
1/4 tsp turmeric powder
1 small beetroot chopped
2.5 cups water
1 tsp sugar
1/3 tsp cumin seeds
2/3 tsp mustard seeds
1/2 tbsp oil
Pinch of asafoetida
Tempering-
1 tbsp oil
Pinch of asafoetida
1/3 tsp mustard seeds
8-10 curry leaves
1 dry chilli
Coriander for garnish
1. Mix yogurt, gram flour, ginger, beetroot, turmeric powder and chilli and grind well
2. In deep pan, heat 1/2 tbsp oil. Add asafoetida, cumin and mustard.Once they splutter, add the yogurt and gram flour mix. Let it come to a boil and water. Reduce the flame and simmer till the raw smell of gram flour is gone. I usually keep for 10-15 mins. Add salt and sugar
3. Prepare tempering. Heat oil. Add asafoetida and mustard seeds. Once these splutter, add rest of the ingredients and cook a min. Serve over the kadhi and garnish with coriander
