Keto Swiss roll with cream cheese and raspberry jam filling ? I haven’t made this for a while and because I used course almond flour my sponge cracked in places. It still tastes delicious ? First I made the raspberry jam by placing a cup of frozen raspberries in a small pot. I added 1 tbs sweetener and 2 tbs water. Cooked the mix for a few minutes until raspberries mushed, adding more water if needed. I took the mix off the heat, added 1tbs of chia seeds and let cool ? For the sponge I mixed 100g almond flour, 10g coconut flour, 1tbs gelatine powder, 40g sweetener. In another bowl I mixed 4 egg yolks with 20g sweetener and 1 tbs lemon juice until pale. In another big bowl whisk 4egg whites with an electric mixer until frothy, add 20g sweetener, pinch of salt and 1tsp lemon juice until stiff peaks. Beat in the egg yolk mixture but don’t overmix. With a spatula carefully fold in the dry ingredients in stages until mixed. Pour in a parchment paper lined baking tray (17×11) and bake in a preheated oven at 175 degrees for 13-15 min. Take out of the oven, turn upside down and carefully remove the paper.Roll the shorter end between clean tea towel or a fresh sheet of parchment paper and keep warm ? for the cream cheese filling I mixed 1 block of room temperature cream cheese, juice of half lemon and 50g sweetener with a hand mixer until smooth. I added 1/2 of cream and mixed until smooth again ? I carefully unrolled the sponge and spread all of the cream cheese filling firss followed by big dollops of the cooled raspberry jam.
