Kefir, Spinach and Herb Soup with Crispy Lavash Squares
Kefir is a fermented milk drink that originated several thousand years ago in the Caucauses. It’s thick, creamy, and brimming not only with minerals, vitamins, amino acids, and enzymes, but also with probiotics and beneficial yeasts, too. This kefir based soup is really healthy and can be served both warm in the winter and cold in the summer months.
To prepare you will need:
4 liters of kefir
1 tbsp flour
3 bunches of spinach, chopped
1 bunch each dill, cilantro and parsley chopped
4 tbsp cooked rice
Salt and pepper
For the Lavash Squares
4 sheet of lavash cut into squares
3 tbsp extra virgin olive oil
1 tsp paprika
1/2 tsp kosher salt
This soup is all about stirring to get the right consistency. To start, mix eggs with flour and pour into a pot filled with kefir that is off the heat. Once mixed, place pot on stove and cook on medium heat stirring continuously. Once bubbles form, cut heat to low and add spinach, herbs and rice. Cook for ten minutes stirring continuously. Turn off heat, add salt and pepper, and stir non stop for 10 more minutes- soup is ready! The soup can be served as is or as an optional garnish I cut lavash bread into squares toss it in a frying pan with olive oil, paprika and salt until theyre crispy. So healthy, so tangy and refreshing!
