Kale, spinach & chickpea loaded sweet potato 🌱😌

For the filling:
β€’ onions
β€’ spinach
β€’ Kale
β€’ zucchini
1.) mix all ingredients in a blender. The zucchini will make it nice and thick πŸ˜›

For the potato:
β€’ Avocado oil
β€’ Cinnamon
1.) wash potatoes and rub them down in oil.
2.) season with cinnamon & salt & pierce holes in them with a knife or fork.
3.) put a piece of aluminium foil over the tray and put your potatoes in the oven for about an hour. But, remove them at about 30 – 40 minutes when they’re softer to cut a line in the middle so you can split them open later 😊
4.) remove them from the oven once they’re super soft and yummy and put your fillings in .. and then enjoy the beautiful carbohydrate that Mother Nature gave us πŸŒ±πŸ™ŒπŸΌπŸ™ŒπŸΌ
