Just look at the crust on that pie 😍
I was inspired by a recipe I saw on @nationaltrust website (search for ‘sweet potato and cauliflower curry pies’) and couldn’t wait to give it a go. I used @jus_rol shortcrust pastry and made one big one (rather than mini pies) to cut down on time but their tip to use chickpea water to glaze the pastry was genius! I usually use a bit of whatever plant milk we’ve got on the go, but have never managed a golden crust like this before. Aquafaba is really like magic for vegan baking.
This was really cheap and easy to make, with plenty of seasonal and store cupboard ingredients. Vegan cooking doesn’t need to be expensive or tricky – potatoes are nutritional powerhouses and provide copious amounts of vitamins and even protein. We mostly eat seasonally and simply here, with a good portion of home grown or locally bought veg. Have you had a go at vegan cooking this #veganuary?
