?This is my new addiction guys. This spread tastes like a mixture between a biscoff biscuit and cinnamon swirl!
?I’m enjoying a spoonful with a cup of tea, mixed into yogurt or on banana slices.
?200g jumbo oats
?100g shredded coconut
?250ml of maple syrup
?240g of runny tahini peanut or almond butter (I tried all 3 options and they’re great)
?180ml of melted coconut oil or olive oil (light taste)
?1 tbsp cinnamon
?1 tbsp vanilla extract
?2 pinch of salt
1. Preheat oven to 170c and line a baking tray
2. Bake the jumbo oats for 20 mins mixing every 5 mins. Then add the coconut and bake for another 15 mins, mixing every 5 mins.
3. Place the baked oats and coconut in a blender and blend until you get a crumbly flour. Add in cinnamon and salt and pulse.
4. Next add the maple syrup, tahini/nut butter, oil and vanilla extract. Blend until smooth and liquidy. If too thick add in a touch of water until you get the right consistency.
5. Remove and pour into an old jam jar or Mason jar. Keeps for a week or longer in fridge.
