I’ve decided to go through the rainbow 🌈 with pasta😚. Hopefully this little array of colorful pastas will give you some more ideas for pasta sauces! This dish was made with carrots, Kabocha squash, and orange grape tomatoes😆 enough beta carotene for a lifetime

“Outrageously Orange” Pasta by @janayichien

Ingredients:
1 roasted carrot
1 garlic clove
2 Tbsp nutritional yeast
1/2 tsp salt
1/2 tsp black pepper
1/2 cup walnuts, soaked 6 hrs
1/2 cup veggie broth
6 oz @tolerantfoods lentil pasta (or pasta of choice)
1 cup chopped Kabocha squash
1 cup halved orange grape tomatoes
Parsley

Directions:
1. Blend together roasted carrot, garlic clove, nutritional yeast, walnuts, veggie broth, salt, and pepper until smooth
2. Cook pasta according to directions, and throw in Kabocha squash 5 minutes before done cooking
3. Drain pasta and squash and return to pot with orange grape tomatoes and sauce
4. Toss together and garnish with parsley and black pepper.
