I’ve Been Making These Vegan Pancakes From Scratch For 11

I’ve been making these vegan pancakes from scratch for 11 years now and they are so good I can’t believe I’ve never shared them before! I got the recipe from a friend I lived with for a time in Brazil before I became a mom. Aubrey Zaugg, if you are out there, thank you!

Kid-Approved, Parent-Obsessed, Vegan Pancakes:

3 cups Almond Milk (or any milk)
3 flax eggs (see below) or reg eggs
6 Tbsp Honey or maple syrup
4 1/2 Tbsp Olive oil
6 tsp baking powder
3 cups sprouted whole wheat flour (or regular whole wheat)
A few shakes cinnamon & touch of salt

*Flax eggs: for each flax egg mix 1 Tbsp ground flaxseed with 3 Tbsp water, let sit a few minutes before adding to the batter..

Mix wet and dry ingredients separately and then together with electric mixer. Heat on frying pan on medium-low heat until golden brown. This recipe makes more than enough for my three kids and I.

Top with fresh chopped berries and pure maple syrup. OR top with your own strawberry “ice cream” by blending frozen strawberries, bananas & almond milk in a high speed blender (such as Vita Mix or Blentec). Enjoy! 💗.
