It’s the weekend! Yay!
Yesterday was such a big cooking day and I recently started to make some home made jams!
Absolutely obsessed with them! Also because every time I want to buy jam at the store, I end up reading the ingredients and see how much sugar is in them…. and I put the jar down and say “no thank you”. So now I can make my own, sugar free, all natural and spiced up with my own chosen spices! Looooove it!
So I thought I could share this with you today for my #sixshadesofpurple
Home made gluten free vegan sandwich-cookies with home made grape jam!
Ingredients for the jam:
700 gr of grapes
Juice of 1 lemon
1 tbsp of cinnamon
For the cookies:
120gr vegan butter
45gr Mascobado sugar
180gr gluten free flour
Method for jam:
Cut in half the grapes and remove the seeds.
Put the grapes in a big pot on a low-medium heat, add lemon juice, cinnamon and cloves.
Once it starts boiling, lower the heat and let simmer for about 1 hour. Transfer the boiling jam into glass jars and close the lid. Wrap a wool blanket around the jar and let it cool down slowly. At some point you should hear a “pop” that indicates that the jar has sealed.
Method for cookies:
Work together the butter and the sugar until smooth. Add slowly the flour. Once you have a ball of dough, put it in the fridge for about 1 hour. Roll out the dough at about 2mm and cut out your cookies with a cookie cutter.
Bake at 180C for 12 minutes. Let it cool on the tray.
