It’s soup season!

Tonight we made gluten-free, vegan chickpea noodle soup with dumplings! 🍲 We used @monkeyandmekitchenadventures Chickpea Noodle Soup recipe, which was excellent.

I made a quick batch of gluten-free, vegan dumplings to drop into the simmering soup – it takes probably 10 minutes.. and is WORTH IT. I adapted this recipe from @healthiersteps 🥰

Gf/v dumplings:
1 1/2 cups gluten-free flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups water
1 tablespoon dried parsley

Combine dry ingredients, and then slowly stir in the water until it’s a creamy dough. Once your soup is simmering, use two spoons to drop balls of dough into the soup. Cover and let cook for around 5 minutes. Flip dumplings – stir around your soup, and let go for another 5.
